no more expensive knives for me! as a home cook, not a professional, if I use a knife for an hour a day or even less, I don't need or want a knife I have to pamper. I buy cheap ones, I use the heck out of them, sharpen them often and they go in the dishwasher. Then after a few years, I get new ones for $15-25 for a set of knives. they cut stuff, I clean up, people eat good food. Unless I were a professional and cutting food for 6+ hours a day, these are a waste for me. Been there, done that, switched to the cheeeeeeap ones.

I used to be the same, then I got a couple zwilling knives and all my Cuisinart and cheap Walmart knives barely get used. I have only sharpened it a handful of times and it still holds an edge and a very sharp one at that. Little to no effort required for cutting and less likely to slip and get cut with a dull blade

I like the mix of both. I have a couple cheap Kiwi knives, which are still pretty amazing for the price, which I use for quick things, everyday 5 min preps. If I am preparing any sort of larger meal, I always opt for my Zwilling Santoku as it is honestly just so nice to use. Extremely sharp, so less chance of slipping, and has a perfect weight to it to aid in cutting and finesse. It's fine to use cheap knives, but you always want at least one or two good knives to use when needed for bigger cooks
