There's an entire seperate channel of the motherboard being unused in a single stick config. The dual channel part is handled by the cpu/chipset.

Depending on the application, dual channel DDR5 can make a big difference like 20-30% performance boost.

But the gap isn't as wide as ddr4 single vs dual.
