Would you consider this suitable to use as a fold-up desk, putting a monitor or two inside the cabinet and a keyboard/ mouse on the fold-down table?

It should work as a desk. However airflow might be a problem without top venting. But if it gets too hot inside with a monitor. You can always add fans to sides.
