The total amount of weight a jack stand can hold is actually not the most important part, most jack stands are able to hold way more weight than they are rated for. It is the tip over force that is more important.
I would get these over Harbor Freight stands if you are on a budget. Harbor Freight still seems to have jack stand quality issues.

any deals on 3 ton versions?

When it comes to putting a body under a car, I go by their weight rating and not what they are tested for. But you do you.

Also, a double cab silverado 1500 is under 3 tons, so if you wanted to use jack stands on a small car and a truck, I'd get the 3 ton models as you would not need to lift the small car as much to get it on the stands. The higher weight jack stands are almost always a higher minimum height. If you need to take all 4 wheels off the vehicles, you'll need 2 sets anyway and two pairs of 3 ton stands would support any passenger vehicle on the road.
