I say all of this was someone who still owns their PSX copies, and the Sega CD originals too! I personally wish they re-translated it and did not like re-enduring Victor Ireland's work, but you take what you can get, I suppose!

With that said, and considering a lot of the JRPGs you mentioned, I still think you'll like it!
Good walkthroughs can be a little tough to find, and most of the time you'll be relying on things written for the PSX, but sometimes you'll have to scrutinize it and make sure you're seeing something that's for that and not the Sega CD... which sounds funny in this day and age, but it goes to show that this remaster wasn't really popular, I suppose? You expect the Internet to write a guide for everything nowadays, haha!
I also suggest these specifically because you mentioned "Grandia 2;" the Lunar series is basically Grandia's prequels. Not literally, it's a spiritual successor sort of thing, but you play Lunar 1, then 2, and then Grandia, and Grandia 2 and 3... you know they're all in the same family! Could be fun for you if you've never done it before!
EDIT: Oh yeah! If you do get this, BIG piece of advice: DO spoil when you reach the "point of no return" in 2's story, because you will want to spend a bunch of your money getting items and everything beforehand. ALSO! If you want to make it to the final boss without using up everything you bought, you can abuse the save/reload feature. Enemy positions reset when you save/reload but where you were standing does not. Turns it into a stealth gameplay experience, haha! You can use that tactic earlier in the game too if you ever get stuck somewhere difficult, but I figured it out in the last dungeon and used it myself!
One more thing: I personally did not like the blurring effect in the remaster. It hurt my eyes most of the time. You can turn off Post FX in the menus to get rid of it!
