I've got this laptop. Alot of the items you've listed are really running in the cloud, so running them wouldn't use any more resources than just having tabs open? This things got 32 GB of RAM so it does fine with tabs. VM/Docker containers really boil down what you are actually running and how hard they are being run. I've got lots of VMs and docker containers running on far less hardware.

Both are bad options due to low performance Processor The whole Lunar Lake series is developed for Battery life and high performance Graphics but poor CPU performance. You need a lot more power than that. Try to find CPU with Core Ultra 7 255H or AMD Ryzen AI 9 series Processors. Also, even a midrange dedicated nvidia Graphics is recommended, in case in future you want to run AI models or use Mahcine learning algos.

Intel ARC with 32GB shared RAM is trash. I have this HP laptop (got it for +$50 a year ago to use for my MSBA program, and I've had to 1-install vanilla Windows, 2-remove all the animation settings to do similar work just to get it to stop freezing with 60+ chrome tabs (using auto discard) and Tableau, Anaconda, MySQL workbench, etc., 3-update drivers for everything multiple times, 4-sit through weekly Intel display driver updates for the past month.
The hardware sounds amazing but if you use multiple monitors, it will drive you crazy, even if it's just one additional screen. Integrated graphics cards with shared RAM do all these computers such an incredibly disappointing disservice.
