I've been eating this stuff since I was a kid. I know the taste like no other. It's not just the spice, but it's also about the aroma and aftertaste. There is a group of people trying to push a narrative that was spread by the farmer's lawyer, but the man behind the Huy Fong brand is gold standard. Regardless, if you grew up with the taste, you would know what I'm talking about.

And yes the "original" cock sauce, that green topped sriracha that we all grew up loving did change and you have to either be fortunate enough to still be enjoying old stock or you need to get your senses checked by a doctor if you don't know this, even the color changed and it went off the shelf for AGES while supply changed in my area!

The more common "mainstream" brands in Thailand, that you can find in the US now, are Sriraja Panich and Kosol (aka Seagull brand in the US).
SP is widely considered the original but there are endless documentaries/stories that claim otherwise.
In any case, if you want to experiment on a new brand but are unsure if the flavor profile is closer to the actual Thai one versus the Huy Fong, the main thing to look for in the ingredients is water. The original one(s) are runnier, therefore water is usually towards the top of the ingredient list whereas HF-style doesn't add any water.
