Based on the photos, the wall looks thin. Can anyone tell me if "carbon steel" is as good as the cast iron you usually see with Dutch ovens?

Carbon steel will likely not give you the effect you want from a cast iron Dutch oven. Carbon steel excels at the opposite, being able to react quickly to heat mean it'll cool down fast once you turn down the heat vs cast iron 's ability to retain it.
