Methylene chloride, which is what is used to decaffeinate most coffee, is a carcinogen and neurotoxin. Look for Swiss water process decaf coffee, which is more expensive but only uses water to remove the caffeine (it also tastes much better!)

Spot on! Methylene chloride is indeed a known carcinogen and neurotoxin, which is why chemical-free methods like the Swiss Water Process or CO2 extraction are highly preferred. However, for anyone worried about their daily brew, it's worth noting that methylene chloride evaporates at around 40°C. Since coffee beans are roasted at over 200°C, the chemical is almost entirely vaporized, leaving virtually zero traces in your actual cup. Still, choosing Swiss Water is definitely the safest and most eco-friendly bet!
