Galangal root is an aromatic, flavourful alternative to ginger in a range of recipes. Warming and tasty, a small amount of this root will go a long way in your favourite Tom Yum and Tom Kha Soups.
Galangal root differs from ginger because it tastes spicy, slightly sweet, and peppery while galangal tends to taste more like pepper. Unlike ginger, galangal root cannot be grated, but it does provide an extra earthy note which is missing from recipes using its more widely available cousin.

I have only ever used whole galangal. I have no idea how this powdered form tastes or how it would sub into a thai curry paste.
I've used both. Whole galangal can be tough to use because of how fibrous/hard it is. Can be tough to cut with a knife. It looks so similar to Ginger but they are two very different spices. Ginger is much more easy to cut through. Ginger is much more spicy/hot/citrus.
The powdered form of galangal has the same kind of taste as whole galangal. That peppery, citrus, pine/Woody/camphor notes. I'm always reminded of mustard too when I eat it. I haven't tried this particular brand. But I imagine they all taste just about the same. Just like powdered garlic powder across brand does too.
This is an outstanding deal for this much galangal. Really nice to use in soups as the base to a Thai soup broth.
