512 is enough for nearly everyone. You use cloud or external storage like traditional hard disk via usb to add 2 6 8 16gb storage. A backup is good idea also. Can't do that with only paying for bigger single ssd inside. I would suggest anyone who can't make 512 work get a desktop and add internal and external hard drives. A connected storage device can hold many gig and multi drives. Adding a large 4k monitor is another bonus to a desktop. Wireless keyboard from logitec and mouse and it's a comfortable setup. A simple travel laptop if needed. Chromebook for cheapness.

You can't bring a desktop with you. And I have over 1 TB worth of data used between my intenal hard drive and my external hard drives. It's really not that hard to hit that now a days.

The thing that you can't get around is desktops are longer lasting and more powerful. The laptop cpus and gpus are much less powerful. They suffer from heat in a laptop. The tiny fans burn out. The battery wears out. Screens crack. They are stolen or dropped or put on a lap and overheat. A 5 year old desktop can still be fast enough today without defects. A laptop not so much. Laptops have things in common with cell phones I'd say. I switched from heavy powerful laptops to having both long ago. A person without a need for a laptop >$500 might be fine with a single device. I knew some people who thought if you bought a $3500 laptop you would never need to upgrade again.
