I tried them once. Not that good, because it's cooked frozen. Better to go to a diner where they're fresh

I'm not sure if this applies to all fried foods, but it's actually recommended to freeze fries prior to frying for a crispier crust.

It does not, but your tip about fries is correct. You also don't have to freeze the fries to make them more crispy on the outside using a variety of other techniques. You just have to dry out their outer surface which is done more quickly by puting them on a wire rack and placing them in the fridge for a few hours since it circulates air and helps to evaporate more moisture than just sitting on the counter where there is no breeze. You can put them on a wire rack on the counter with a small fan blowing on them for about an hour which works great too. All those methods take time though, and I'm impatient so I just the double fry them to achieve a similar result but much faster. 1st fry @ 300F for 4-6mins to semi-cook them and dehydrate the outer surface, remove for 2-3mins, then 2nd fry at 350F-375F for 2-3mins to really crisp up the outside and they are great. This works best with Russett potatoes. Dusting the fries before the first fry with a very light coating of seasoned flour also helps to create a very crispy surface which is the same technique many diners and fast food restaurants use such as Arbys and JackInTheBox to get a super crispy outside while also imparting more flavor and color.
