Any recommendations for an old guy that doesn't want to play obsessively for hours, but just have some fun here and there? I hear Golf Story is good.

Golf Story is definitely fun here and there! I would also look at Torchlight 2 for a "Diablo like ARPG" and Children of Morta. They both aren't necessarily short but they are good for quick sessions and second screen play while watching TV

Islanders is fun puzzle-ish city builder with very solid controller support (I play on PC). Very 'chill' and pressure free. Lets you drop in and out at any point so you can pickup and put down without feeling the need to finish something or lose progress. Isn't hard (nor really has deep strategy), but keeps you occupied. Music is relaxing as well.

I had a stroke, and I'm looking to get back into gaming. I'm open to trying any game that I can handle. I can currently only use my left hand, but I'm able to remap some of the buttons.

When I had one on my right side, I got into tactical RPG's like Front Mission, it's a great series and the first game was a classic for SNES/SFAM, it got a remake that's on sale for $3 in this sale. Worth a shot I figure

I don't know if any are on this list, but survivor games, like brotato and vampire survivors (both $5 games with tons of hours to be had if you like em) should be great for single hand use

Disabled gamer here - normal left hand w right side weakness, very little finger strength . For the switch you can buy or 3d print a one handed joycon adapter and that should help a lot even though the cons frequently come loose) from the holster. Evil Controllers also makes/custom adaptive xbox/ps controllers - might not work for pure one handed use, but I've had good results with 1.5 hands.

Planet of Lana is a story based side scroller that I would recommend. It was an interesting story with simple controls and not punishing when you have to replay parts if you die.
