Admittedly we leisure ride at 15mph (Level 1) and rarely (Level 2). Riding faster (Level 3) works but I think you should think about safety of that speed with any bike and you are maxing out a cheap bike with this one and possibly asking for issues (heat).
Advice on assembly, use blue thread locker where you can on bolts you assemble, we've had a few go missing due to vibrations.

how standard are the parts like chain and gears and cranks and pedals, can they be swapped out?
can thinner tires be put on like 2 inch slicks?
any chance the battery is lifepo4 so it doesn't explode/burn?

I don't get most of the complaints.
"Steel frame" - which is probably more durable.
"Cheap bike has cheap parts" - should be understood.
"Won't play Crysis on max settings" - okay.
"The instructions were vague" - it literally came no instructions and instead linked to a YouTube video:

...which is well done and I appreciated over "engrish" or poorly human drawn manuals. Some holes don't line up perfectly like you would expect from a $1k bike, but we're talking the brake light isn't level nitpicking - not redrill holes level bad. And obviously, any bolt/screw/etc. you see - double check that it is tight.
The fat tires are fairly pointless as this thing sucks off-road. The brakes suck. The suspension is weak. Feels heavier than it is. Now, let's remember that this is a $330 bike that should be ridden by kids and not having some Unc treating it like a BMX bike. Back to being amazing.
It will handle adults just fine on pavement. Complaints that it can't haul bigger people over 30MPH seem like blind hate as the bike clearly is not meant for that. You're thinking of $2k scooters - not $330 Chinese ebikes.
Brakes are my only real gripe. Grossly underpowered for the speeds the bike can achieve. Not sure if this is just how bicycles do it, but the front brake is on the clutch side and the rear brake is where the front brake should be (easy to fix). Hydraulic ebrake kits are online for $30 - tempted to try one of those if anyone has any experience/recommendations.
No idea on the range. Seems impressive for a $330 bike. Batteries are easily swappable - instant range doubler, but cost damn near as much as the bike. So, you're probably best off just buying a second bike as a parts bike. No UL certification. Spend the $15 for something like:

...to charge the battery in. Not that I am overly worried about an electrical fire. But they do happen, and cheap insurance just-in-case.c

It's a 250w motor , 750w peak output. Going to be useless for anyone over about 175 pounds
As for peak versus constant power, 3x the power on this thing would be a death trap. 0-60 in fast. 60-0 in, well, depends on what you hit when the brakes barely do anything. 😹
In regards to the above, I have seen people claim over and over that this bike is speedy and fun and goes 28ish mph when unlocked. Some people say the PAS is awfully jerky and they disconnected the cable for it, iirc.
Also forgot the obligatory wear a helmet, obey propaganda and traffic ordinances, etc.
