The Zojirushi Home Bakery Supreme is a premium bread machine best at making fresh, hands off loaves with very consistent results. It turns out soft, tall bread, browns more evenly than cheaper machines, and can handle mix ins, pizza dough, rolls, sticky buns, jam, and yogurt. The recipe book is useful, but the machine takes some dialing in, especially ingredient order, yeast, water, and recipe measurements. The Supreme has bottom heat only, while the Virtuoso adds top heat and more presets. A dependable pick if you want bakery style bread at home and are willing to learn its quirks.

i can't remember; didn't someone link to a king Arthur bread forum that recommended the https://www.kingarthurbaking.com/...ad-machine over this model for making sourdough bread?

EDIT: Here it is: https://www.reddit.com/r/BreadMac..._virtuoso/

So the model that costs twice as much is better? Is that really the point?

I've had this unit since Covid. I know it's pricey but if you can somehow afford this, don't blink, just get it. I have fresh bread on-demand of my own recipes at least 2x a week, only a handful of fresh ingredients (not like the 20+ ingredients in grocery store bread to keep it soft and shelf stable). And the taste is amazing. You won't regret it.

Can you share your recipe? Sounds like it's optimized.

I bought this machine about 20 years ago on a whim without ever having used a breadbasket. We're were making probably 2-4 loaves a week when the kids were in school and also made a bunch of other stuff like pizza/stromboli, sticky buns, rolls... Definitely a great purchase worth the money.

Sure thing, the recipe book that came with it is great. I made basic mods to make it even healthier and dairy free: 370 ml water, 2 tablespoons olive oil, 2 tablespoons plant based milk, 2 cups whole wheat flour, 2 cups white flour, 2 table spoons sugar or Splenda, 2 teaspoons salt and 2 teaspoons yeast. Optional: 2 tablespoons each of flax seed, wheat germ, hemp hearts, chia seeds, and dash of cinnamon. And for those that worry that bread is too carby and drives weight gain, I haven't put any weight on for years on this recipe despite eating at least 2 slices a day. Enjoy!

I've been making homemade bread for 10+ years for my family. I have this recipe that uses only milk and heavy cream but it's amazing, and the fat keeps the bread soft and fresh for longer time, but my kids are finally tired of it so we recently started buying store bread again. 🤷

edit: I have the bb-pdc20 model, not exactly this one.

Same here, we have the same experience. The machine is the best. We do put in some extra yeast to ensure proper rising. And the amount of water we increased slightly over the recipe.

I have the Virtuoso which is pretty similar functionally. Like someone else said, if you can afford it, do it. Once you find your perfect recipes, it's so nice to just drop in the ingredients (in the proper order) and have fresh bread done in just a couple of hours. One of my favorite things I ever bought.

Love mine, if you're on the fence because of price set up some FB marketplace alerts for Zojirushi. I picked one up for $75 and I've seen them go for $50-$150 since then.

Can you explain? I've always been told the zojirushi is nearly the Penical without the cost?

Ah I see what you mean.. the newer better version of the zojirushi.. Sorry and thanks for the recommendation. Any reason why it's much better? I'm researching separately as well.

Edit again..

My research shows the virtuose has a heater for top and bottom(more even cooking of bread), dedicated gluten free, whole wheat, multilegrain dedicated, vegan, salt-free/sugar-free, and it is a bit larger. It also costs more but I think i'll wait and see if it drops to like 280-300. Apparently the heater in the lid and bottom make a big difference.
