The updated ones say AND in the description. The battery lasts 7 years. I'm sure we will not be using them in 7 years and will upgrade to something better by then.

Looks like these use a rechargeable battery? Don't those degrade over time? Meaning you're going to have to charge your battery more and more frequently over time?

Yes, that's true... though it is definitely less than devices that recharge daily. Since it is only once every 365 days for a complete recharge cycle, it really is only affected by the time aging chemical breakdown, which is closer to 2% – 5% per year. So by year 5 it still could be getting 300 days between recharges. Definitely less though if stored in extreme hot or cold environments like a car parked outside.

General question for those who use any "off-brand" trackers - aside from price, why would I want to pick this over an AirTag as an Apple only user/family?

Where are you seeing AND? I see OR everywhere. Also the updated ones have this in the description:
The key tracker does not support cross-platform use and can only be connected to one platform at a time (iOS or Android); location cannot be shared or synced between iOS and Android apps

Uuuh, price I guess. Here, you get four trackers for $28. A pack of four AirTags costs $89-$99. The Gen2 AirTags are cool though because they provide a compass that points directly to them once you get close; I don't know how private the tracking is on these UGreen finders, and I have had some trouble with connection quality with the credit card shaped tracker I put in my wallet.
