Several things to keep in mind:

First, this is not "refurbished", it's used. Nothing has been done to replace, repair, or verify any components other than a wipedown with a damp cloth and basic power test.

Second, this machine does NOT come with the required 140w power brick. Only the power cable --- "MAGSAFE" cable. The charger is an extra $99 at "APPLE".

Third, this is five year old machine with the "M1" cpu -- first generation of the "M"-series processors. To say it's dated is an understatement, given the current generation is the "M5", with some devices even having an "M6" cpu. Needless to say, future support for this cpu may be limited.

Fourth, it's a five year old machine! Even with it being a better-constructed "PROFESSIONAL" tier laptop, fully expect things to be failing or ready to fail. These ultra-thin machines unfortunately run hot, and heat is the enemy of electronics. Five years on a battery is also a long time -- do not be surprised if it starts getting "puffy" (expanding uncontrollably) in the coming years. With all things considered, there are probably fewer years ahead of this machine than behind it.

Bonus: The "Allstates" warranty is barely worth the paper its printed on. Fully expect hassles if your machine gives up the ghost in the coming year.

As someone who is typing this from an M1 Pro MBP, these things are still extremely capable machines. Yes, the processor is years old - but it's still quick and great for an everyday machine. And, with rammageddon, the 32gb that the model has is a perk.

I just bought the M6 Mac mini yesterday, replacing my M4 Mac mini - and I still use my M1 Pro MBP daily; I have literally no reason to upgrade it. My battery cycles are in the hundreds, and it still has ~90% capacity.

Risky, yes for cosmetic issues - but looking at the reviews, looks like people received pretty decent condition machines.

I would definitely get this over an M4 MacBook Air with 16gb ram.

In previous threads you asserted that these sellers merely "wipe down" and power-test their machines, and when I asked you for evidence that this is what was actually done to the inventory, none was provided. Now you're presenting the same assumption as fact on an entirely different listing.
eBay's own Refurbished program says otherwise: Good - Refurbished is not the same condition as Used, sellers must qualify to use it, and eBay says qualifying products are fully functional, tested and refurbished to a high standard. Sellers who aren't eligible for these Refurbished conditions have to list them under another condition such as Used. eBay Refurbished Program [ebay.com]
There are perfectly legitimate cautions here. It's a 2021 machine, buyers should check battery health, and if the listing doesn't include the 140W adapter that's worth factoring into the price. Nobody needs to pretend otherwise.
But calling an M1 Pro/32GB machine merely an old "first-generation M-series" Mac while warning vaguely that future support "may be limited" is rather selective framing. Apple currently supports this exact 2021 16-inch MacBook Pro on macOS Tahoe 26. Apple's current macOS compatibility list. [apple.com]
And predictions about components "failing," batteries becoming "puffy," and the included warranty being effectively worthless are just that, predictions.
Criticize the actual compromises all you want. But reposting the same "it's really just used" claim on every refurb MacBook thread still doesn't turn an assumption into evidence.

The "refurbished to a high standard" is meaningless, and has no enforceable characteristics. It could be as received with coffee stains, it could have a new battery. Since the seller isn't disclosing, it's reasonable to assume a low bar. When possible, always look for listings that guarantee cosmetic condition (maximum size of scratches, dings, etc.), consumables (battery cycles and health), and prior repairs (whether replacement screens have been installed, etc. -- these are often knockoffs that lack features of a factory Macbook screen)

Here is what I think about this deal:

First, the chip being M1 Pro isn't the problem. If you are going to do a lot of creative works, This M1 Pro w/ 32GB of RAM will be much better than any M4/M5/M6 non-Pro w/ 16GB of RAM considering the price will be similar. If not then the newer model w/ 16GB of RAM may be better.

Second, as somebody has said, this isn't a refurb. But what's worse is if you look at the eBay listing, this "good" condition is basically a C+ grade. So, expect a lot of scratch on it even if it's fully functional.

Third, the M1 chip was made in 2021, while the functionality isn't a problem the support will be. Apple has discontinue it in 2023 and in the past Apple has software support for its MacBook for 7 years, well if this hold true then you only got 2 years left of OS update.

The only good news is that I believe there is a community working on getting Linux to work baremetal on it. Again that's Linux and at least it won't end up as paperweight. This is one reason why I haven't very go all in to Mac yet. Because buying a Mac is more like leasing it. Especially how locked down they are. I have less of a problem a phone being more locked down as they are always connected and always with you if I have to make a trade of it being lock down but more secure and then treating it as long term disposable then so be it. Even that I'm less incline to think like that considering the price of them are getting more and more expensive. Some even cost as much as a laptop. Still not excessive in the US as people here always buying new phone while trading in w/ new plan for discount every 2-3 years. But if you treat it like that in other country where you always pay full price, a full price of around $1,000 USD that will be obsolete in about 5 years. That's a $200 lease a year. While a PC in generally you can re-purpose it, less so w/ Mac considering how locked down they are.

The walled garden is the entire point for Apple, and why outside the US, you see single digit market share. In the US, most Apple users dump their gear after a few years, and those get flipped quick for more than they're worth. These units that make it 5 or more years end up at these high volume "resellers" for next to nothing, and they put in next to nothing to flip them. This specific unit, by performance, would be less than the asking price even if actually refurbished (internal cleaning and battery replaced).
