Costco's Nintendo eGift card promo is a strong way to stretch Nintendo credit for Switch hardware, games, and eShop purchases, with the discount stacking cleanly in several carts and even pairing with Costco email coupons. The cards arrive digitally, each code is separate, and the balance can be used toward consoles or split across multiple purchases. The main friction is checkout, where some orders are canceled or delayed and account verification or support calls may be needed. A practical option if you want Nintendo credit without paying full price.
Nintendo Switch buyers who want to prepay hardware, because eShop credit can be applied toward consoles and other hardware.
Shoppers stacking store promos on a larger Nintendo purchase, because the cards can combine with Costco email discounts to lower the total further.
Digital game buyers who want flexible eShop funds, because the cards can also pay for games and downloadable content.
Families splitting Nintendo credit across multiple accounts, because each card has its own code and the pack can be divided among different people.
Shoppers whose Costco account details are not fully verified, because orders can be canceled until billing, shipping, and account verification match.
Players needing immediate codes for a same-day purchase, because delivery can take hours after order confirmation.
People who need to place repeated large orders quickly, because Nintendo limits one transaction per card set per account every 14 days.
Buyers trying to use Nintendo eShop funds at physical Nintendo stores, because digital balance cannot be used in the New York or San Francisco locations.

Gonna keep the Switch 1 to have as an extra Switch (mostly for me lol) and use the virtual game cards feature

If you want those separately from the eshop, it's $500 + $60 + $35 = $695, using the gift cards, you would need 7x $100 gift cards, which is $560 from Costco gift cards.
All prices are before taxes, so you would save $10.
Also, there are bundles with games exclusive to Nintendo that Costco doesn't have, and also Costco has exclusives (right now, there's digital Pokopia bundle at costco for $580).

So you're saving $90 not $10.
