The price increase on these has made it a bit unaffordable for me. I miss these when they were $499. I know the capabilities have increased, but darn.

Good as you'll get at the moment. I get the impression anything over 16GB is going to get gated for consumers in the near future to protect the moat around high end AI models. The demand is certainly there and RAM is expensive but not to this degree.

Keep in mind the new M6 256GB version has slow SSD and to make it worse, they soldered it so you're stuck with a slow, small SSD forever. The 512GB version has double the speeds (normal PCIe Gen 4 speeds) in both read and write.

Mostly the same things that most people use the MacBook Pro for, non pro things. As far as performance goes, huge improvement only for those that actually need more. If you have no issues with your current Mac, I wouldn't upgrade just because. Here is some benchmarks:

I ordered online for instore pickup.
trading in old m4 for 500 bucks
got price matched to mc because i have one locally by me.
200 + taxes and fees to get the newest M6 with warranty.

unfortunately same storage and ram but it's for my kiddo who uses it for school and minecraft mainly so it should be fine.

These price increases make me feel like I robbed somebody blind when MicroCenter sold a bunch of M4 Mini's for $400. That wasn't even a full year ago.
