They do work to help keep things cleaner with only limited effect on hot air distribution as far as I can tell. But the other main reason I use then is it makes getting your food out much easier. The deep bucket madness it difficult to get a spatula in if you have good that needs to be scooped out. And although other this like fries or wings could easily be removed with tongs obviously, I prefer to remove good on the liner, directly only a plate/serving tray. I'll grab one edge if the liner and slowly pull while tilting to "pour" the fryer bucket, where the food/liner stays level while I keep dumping the bucket and it nicely slides out obviously to plate. Then I slide the liner out from under the food leaving it in the plate. Sounds convoluted but it's a really simple quick process and makes it so much easier getting stuff out in my experience, especially for larger or flat things you would traditionally want to use a spatula for.
