Kirkland USDA Choice boneless ribeye is being treated as a solid ribeye price, especially where regular Costco pricing runs closer to $18.99 per pound and local grocery stores are often higher. The cut is praised for its thickness and holiday usefulness, with some preferring to buy the pack, trim it at home, and save the fat for burgers or tallow. Quality can vary by package, though, and the marbling is worth checking closely because some cuts look lean or heavily trimmed. Costco blade tenderizing is also a concern for those who prefer a non tenderized steak, making this a good value if you find a well marbled package.

  • Steak buyers who want a lower-cost ribeye than local supermarket pricing, because the per-pound price undercuts nearby ribeye prices in several markets.

  • Shoppers who compare individual steaks before buying, because marbling and fat trim vary enough that one package can be much better than another.

  • Home cooks buying thick ribeye steaks for grilling, because the cuts are usually around 1.5 inches thick and hold up well to home portioning.

  • Holiday meal planners who like breaking down a larger pack at home, because the fat can be trimmed for burgers and tallow while the steaks are portioned and vacuum sealed.

  • Buyers expecting the absolute lowest ribeye price, because similar or lower sale prices can appear at other grocers and Costco is not always the cheapest option.

  • Shoppers who want consistently well-marbled steaks without sorting through packages, because marbling can be weak and some cuts look worse than others within the same grade.

  • People who avoid blade-tenderized beef, because this beef may be blade tenderized and that process is not always easy to avoid.

  • Shoppers who want a leaner, more predictable steak purchase, because trimming can reveal a lot of fat and the usable meat may be disappointing.

I hope they do it again. They also usually do that during Easter, but this year it was more than usual.I used to stock up and freeze most of it.
Publix does the standing rib roast every year for this price. It used to be $4.99 lb/ now recently its $7.99 lb. Buy the pack, cut it yourself and vacuum seal. Trim the edges for some great burger, keep the fat, make some tallow - Its my yearly routine over the holidays. Nothing like that tallow in a cast iron skillet on the grill.
It will go on sale every Holiday including Easter. I usually pick up a Strip loin for Thanksgiving and the Standing rib for Christmas. Keep in mind the Christmas one is higher demand (sometimes cheaper).

Sources for any of that?
- it was Argentinian beef
- it was a single shipment that China rejected from a single supplier, not all beef from the entirety of Argentina.
Argentinian standards aren't the same as US standards though.

I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
Yeah I go crazy with the whole NY strips at Costco, poke each one on the backside to see which one is softest since they have more fat trimmed off of them. Still rolling the dice on the marbling though. I can't wait for the Shoprite prime rib sales, unfortunately I think they only do Christmas and Easter. They consistently have tastier ribeyes than what Costco offers, I'm willing to have extra fat on them if they are super tasty and marbled which they always seem to be. Only one of the 3 Shoprites near me will cut them into steaks for me as of last year. Cutting up ribeyes without the butcher band saw is not easy. I wind up with 3.5 inch thick steaks to avoid hacking the bone area apart.

I think Costco still blade tenderizes their beef. Not really a fan of that process. The Internet says you can ask the butcher if they have non tenderized cuts, but that seems like a bother.

Not the best sale price. I think regular price for Costco choice is around $18/lb and prime is around $25/lb. Hopefully they bring back the sale of $75 off an entire slab of prime ribeye, got that earlier this year and it brought prime down to around $16/lb. Now that was a deal!

Past standards or current standards after the FDA staffing cuts by DOGE? 😉

My local Sam's club sells Choice Ribeye for $15/LB all the time. It's been the regular price for the last 6 months.
