I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
Costco's boneless USDA Choice ribeye is being treated as a strong value for a thick, premium steak, especially at $14.99 to $15 per pound versus higher regular prices around $18 to $19.99 per pound at Costco and nearby stores. The cut is praised for its thickness and holiday cooking potential, and the pack can be broken down at home for steaks, burgers, or tallow. The main caution is quality variation, with some packages showing heavy fat trim and modest marbling, so it pays to inspect each one closely. A solid meat counter find if you want ribeye without paying prime prices.
Shoppers who want thick ribeye steaks for home butchering, because the packs can be trimmed, portioned, and vacuum sealed at home.
Yes. Regular Costco pricing is reported around $18.99/lb in New York and about $18/lb for Choice, so $14.99/lb is a meaningful drop. It also compares favorably with nearby grocery pricing like Walmart at $19-$20/lb and is below some DoorDash/Costco pricing.
Other stores can occasionally beat it on headline price, especially bone-in ribeye at about $8.99/lb or Safeway/Albertsons ribeye around $10/lb on rare sales. Costco's advantage is boneless cuts, thicker steaks, and more consistent quality, so the better value depends on whether you want convenience or the absolute lowest per-pound price.
Yes. The fat cap can hide poor marbling, and one package may look much better than another even within the same grade. Checking multiple packages helps avoid buying a cut that trims down to mostly fat or has a lean-to-fat ratio you do not want.
Costco is reported to blade-tenderize its beef, which some shoppers avoid because it changes the texture. If you want a non-tenderized cut, you may need to ask the butcher whether they have one available.

Not true.
I have not seen any cuts that were Select. Google says that it may be possible in some Business Center stores.
The same as at any grocer, you should compare individual packages of the same grade for finding your preferred package.
Now and then (not normally), I have seen Choice steaks look great, and once in a while, I have seen some Prime look not the best within class for my taste in their lean-to-fat ratio.
Just don't grab a package without checking others within the same grade.
I'm no meat-cut/price expert either. That's why I wondered what regular price was.
.
I used to pick up the Costco Bill Bailey Santa Maria or Carne Asada packs for as low as $9, or jam packed at $21. Not sure when they went crazy, but now the smallest Costco BB Carne Asada is like $40 for the same size.
Safeway or albertsons still occasionally has ribeye for $10/lb or less but with bone-in, but haven't seen it since early summer. Alternates with new york on sale, or if you're lucky sometimes porterhouse and t-bones at that price in the max packs. Costco is not competitive with meat prices unless you like their quality.
Isn't choice steak sometimes on sale at Vons/safway for like $8.99 lb?
That seems about right for Texas when we lived there a couple of years ago. I do know beef is much more expensive on the east coast and $12-15 lb is a typical sale price for choice at Food Lion, Walmart and Publix. Fresh Market usually has really great deals on better cuts but you have to watch the sale bills. TBH we rarely chase deals any more on proteins because they are all so expensive any more and look for expiring marked down packages in the store and plan our weekly menu accordingly...

The Prime Ribeye steaks at the Huntington Beach location is always worse than the regular Choice ones, with little marbling. It's been like that for years there.
