I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
Kirkland USDA Choice boneless ribeye is being discussed as a strong holiday steak buy, with the $14.99 to $15 per pound sale landing well below Costco's usual in warehouse price and below the $16.68 DoorDash listing. The cut is praised for thicker steaks than some grocery rivals, and the pack can be broken down at home for steaks, burgers, and tallow. The main cautions are uneven marbling and fat, so the best packages need a close look before buying. Costco's blade tenderizing also remains a texture concern for some. A solid option if you want thick ribeye and are willing to inspect the package carefully.
Shoppers who like choosing individual steaks, because the marbling and fat trim vary enough that comparing packages can change the eating quality.
Buyers who value Costco's meat quality over the lowest sticker price, because the cut can be thicker and the store's beef is viewed as worth paying for.
Holiday meal planners who break down larger beef packs, because the extra fat can be trimmed for burgers or tallow and the sale pattern repeats around major holidays.
Regular Costco in-warehouse pricing has been reported around $18.99 per pound in New York, making $14.99 look like a discount versus that reference point.
$14.99/lb is unusually low for Costco ribeye and below the regular in-warehouse price of $18.99/lb reported in New York. It is still above some occasional grocery-store ribeye sales, but Costco's thicker cuts and quality can make it worthwhile.
Check multiple packages within the same grade before buying, because marbling and fat trim can vary a lot. Some packages have very little marbling under the fat cap, while others look much better, so visual inspection matters.
Yes. The whole vacuum package was reported at $16.99/lb, with sliced steak portions estimated to cost about $3-$5 more per pound. Buying the pack and cutting it at home also lets you trim fat for burgers or tallow.
Costco ribeye is reportedly blade-tenderized, and some shoppers prefer non-tenderized beef for texture reasons. If that matters, ask the butcher whether any non-tenderized cuts are available.

What's normal price? Costco app already showing $14.99 only.
Doordash>Costco is showing $16.68.
Mentioning because last week had a great Doordash>Costco Slickdeal. Doordash members can link Costco membership and get 20% off first delivery order: https://slickdeals.net/f/20180505

Not true.
I have not seen any cuts that were Select. Google says that it may be possible in some Business Center stores.
The same as at any grocer, you should compare individual packages of the same grade for finding your preferred package.
Now and then (not normally), I have seen Choice steaks look great, and once in a while, I have seen some Prime look not the best within class for my taste in their lean-to-fat ratio.
Just don't grab a package without checking others within the same grade.
I'm no meat-cut/price expert either. That's why I wondered what regular price was.
.
I used to pick up the Costco Bill Bailey Santa Maria or Carne Asada packs for as low as $9, or jam packed at $21. Not sure when they went crazy, but now the smallest Costco BB Carne Asada is like $40 for the same size.
Safeway or albertsons still occasionally has ribeye for $10/lb or less but with bone-in, but haven't seen it since early summer. Alternates with new york on sale, or if you're lucky sometimes porterhouse and t-bones at that price in the max packs. Costco is not competitive with meat prices unless you like their quality.
Isn't choice steak sometimes on sale at Vons/safway for like $8.99 lb?
That seems about right for Texas when we lived there a couple of years ago. I do know beef is much more expensive on the east coast and $12-15 lb is a typical sale price for choice at Food Lion, Walmart and Publix. Fresh Market usually has really great deals on better cuts but you have to watch the sale bills. TBH we rarely chase deals any more on proteins because they are all so expensive any more and look for expiring marked down packages in the store and plan our weekly menu accordingly...

The Prime Ribeye steaks at the Huntington Beach location is always worse than the regular Choice ones, with little marbling. It's been like that for years there.
