The turkey smoking took place on Wednesday, which was good, because we did indeed have freezing rain on Thursday. And I must say it turned out the best of any turkey I've done. I wasn't 100% certain it was thawed on Tuesday, so I put it in a five gallon bucket of cold water for five hours. I had to wing it with my rub as well.
And since I recall the last one turning out much less smokey than I wanted, I used extra smoke wood. The recipe calls for three 2x3x3" chunks of wood. I used... waaaaay more than that. Nine pieces altogether, mostly larger than that.

It took two or three times using my smoker to get the cook timing and amount of wood chips just about right. Haven't tried smoking a turkey yet, simply because Mrs. Frog isn't so keen on turkey.

The turkey this year was the best I've made so far. I cooked it breast side down on 220 for 8 hours after brining it for 24 hours. There wasn't a piece of meat that wasn't moist and tender.

On another note, it's friggin cyber Monday! Why the hell isn't there a deal on a Roku 4 anywhere????

I brined a turkey breast overnight a few years ago, and even though I baked/roasted it plenty long enough, it was still too fricking moist.

And I now have internet at home! The Windstream-provided router looks like it uses an extremely similar chipset to the ones I have here, so over the course of the next month or so, I'll be updating their firmware versions and trying to get them all working independently.
The good news is that they all include a provision for backing up/restoring a configuration file, and it's clearly a Linux-based system, and the .conf is human-readable XML.
