Stew beef - it's cubes cut from chuck roast, and chewy/tough unless cooked for a long time, like in stew. It's relatively inexpensive, too.

It's difficult to believe, but I didn't do anything with the old Caddy yesterday. It was more of a "get in the mind to go back to work tomorrow" kind of a day, honestly. Saturday night, I ordered a bunch of tune-up parts but those won't be installed until next weekend, weather permitting.
