I finished making seafood tarts tonight, turning out another 30 of them. The taste test course of six I baked a few nights ago was just the slightest bit dry, so I basted the filling with melted butter before crimping each tart tonight. I think that will cure the issue.

Cooked blue crab meat and cooked shrimp. The shrimp are pulsed in the Cuisinart with the sharp blade until they're just chopped. The vegetable filling is made with onion, bell pepper, celery, green onions, and parsley, all chopped very fine and sauteed in butter and white wine, along with salt, white pepper, and cayenne pepper. To that is added buttery cracker (Keebler Club crackers) crumbs, the crabmeat and shrimp, and just enough white wine to moistly mix it all together. This filling goes into the butter/cream cheese/flour pastry circles, which are folded over and crimped with a fork. Let me get a picture of the ones that are already prepared and I'll post it.

Prefer to bake them at 350, 10 to 12 minutes, or until the bottoms and edges are browned. They could be fried, but that would yield a fairly oily product. They shouldn't be steamed, at all.

I took the 30 of them I made last night to my friends at Brooks Sandwich House [eatbrookschili.com] this morning, while grabbing a breakfast sandwich for myself. They tossed them in their fry basket for a few minutes and they browned up rather nicely. When they came out, they weren't greasy or oily at all. The folks at Brooks certainly seemed to enjoy them. Smilie

I suppose that's a plausible reason... that error doesn't really tell me much other than something didn't work.
