I've used this with my strat for over 2 years and honestly it does the job well. I would suggest a phantom power supply for this and/or any grounding to prevent bg noise.

Yes you will be able to do this, but if you want to use more than one microphone, you will need the 204HD model, which has inputs for 2 mics.

The trouble with Behringer is, about half of their products aren't really theirs. They are straight up copies of competitor's circuits and occasionally entire chassis, with ICs and MOSFETs swapped...
