Mostly that stainless steel is more durable than plastic. Stand mixers don't have a reverse because they don't need one, so having parts that aren't going to break when the meat isn't moving smoothly...

The proper way to use the grinder is to put it in your freezer for an hour and do not over-tighten the the grinder plate nut.
