Cheap Costco HP came with 4gb stick. You could buy this brand of ram 16x1 stick for $55 and add it to your 4gbs. Or just buy the 2x8 and use the 4 stick to cut mad rails. Toot. Toot.

Keep in mind if your laptop doesn't support XMP (most don't) the G.SKILL kits over 2666MHz have a base speed of only 2400MHz. The Tom's hardware review linked in the OP shows those kits performance...

2x8GB will give better performance as all the ram will work in dual channel. That might be offset by having more RAM overall if what you're working on does not fit in the 16GB though.
