Corded is the only way to fly with dremel tools. Had a cordless one and did nothing for sheet metal, but the corded on ripped cleanly through it using the same disc.

This would work. Get the Dremel EZ-Lock cutting discs. You'll spend so much time replacing cheapo discs as they break.

Those pink attachments in the photo are grinders, I used one of the rounded ones. Be careful if your counter is a single color though, mine turned white when I ground it down but it blended in...
