I don't live in Florida but have kayaked there and it would be great for it! I would never use it where there is a current with a lot of rocks scraping, but this is ideal for what you will use it for.

It would depend on the type of fishing. Dropping bait straight down and waiting for a bite is probably okay. Pulling toppers across the top of the water is probably not the best idea.
