What does it matter if the cooler releases chemicals into the water? When cooking sous vide the food is in a vacuum sealed package; it never comes in contact with the water.

I use zip lock bags - it isn't a 100% barrier. If you ever sous vide with aromatics, you'll notice that the actual bath water will take on some of the fragrance of the aromatics.
