Ubuntu probably around 15G or less after install, xubuntu/Lubuntu 10G or less. You could also try Elementary OS, and Peperment, both are light. The problem is whether Linux support the laptop or not.

1080P is actually better for this underpowered notebook because the integrated GPU really struggles with 1440P. Plus at 11" 1080P is already pretty crisp. But yeah, it's a pity this doesn't have more...

I bought a similar type of laptop with 32gb drive and win10. It's pretty much unusable. 32gb isn't enough space for win10. If all you need is internet access, I'd go with a Chromebook.
