X570 has much better VRMs than 4 to handle the high-end 12/16-Core CPUs. If you want something cheaper you can always go with B450 or X470. Can't see what the complaint is when they've been offering...

Get the Ryzen 3600 (non-x). Best bang for buck by a mile. You will be more than fine with six Zen 2+ cores for your use case. You can always upgrade later, and Zen 3 might have a new socket anyway.
