I think you just log into your Nintendo account at https://accounts.nintendo.com/ and select "Edit", then change "Country/region of residence" to Australia. You can change it back after purchasing...

Thanks. Turns out you have to create a secondb Nintendo account with a new email, setting that second account to the region of the e-shop ( Aus in this example) that you want to buy the game from....
