For ground beef you can just use your food processor. Cooks Illustrated got great results that way. Trim away the fat and gristle first. If you're stuffing sausage then that's another story.

All I do is grind beef bits into hamburger but have done it a number of times with no issues. I used it a week or two ago when I needed HB but there was none to be found.
