Yes it's perfect for hot pot. No experience with using it for fondue. I use mine too sear meat for smash burgers and it's perfect for it. Much better than any other option. No flames = no flare...

Reading the reviews on monoprice, it looks like there isn't any temperature adjustment between 140F and 212F. Pass.

Mono price says "adjustable power from 200 to 1800 watts". So I would assume that it would be a constant 1000 watts at half power.
