Yes you can, just turn off the "spaces" view and you can see 15 cameras at once (at least on my iPhone, other phone sizes may be smaller or larger)

I have the same issue. Outlets in soffit and just a bunch of cable coiled up. I've seen some videos of people cutting and splicing them for a shorter cable, but that will of course void the warranty.
