I would not at all. Just in a cool, dry place. There is no known gain. Best is a vacuum sealed container after opening, but before opening, it's meant to be stored as is.

Yeah, I would try finer grind.
Also, how much are you grinding? Quality beans should only require 14g, but many require 18g unfortunately.
You should not have to tamp hard at all - 30lb...

Their packaging should be quite good to last a while. Fresh roast is absolutely a must if the packaging is not great. Should be packed and sealed as soon as it's roasted.
