Technically all apple hybrids are GMO's. It's just unfortunate that armchair environmentalists have branded all GMO's as being "bad". I guess it's simpler for their minds to grasp.

It would depend on the exact varieties of apple on the tree but generally yes they aim to have varieties that will pollinate each other making the tree effectively self pollinating.
