Interested in the reversible grill/griddle...I assume it would require the same amount of care as a pan? I’d need to oil it after every use, clean without soap, etc?

Personally, I like to sand the cast iron before use. I think a smoother surface is much easier to clean. I find Lodges pans to be very rough.

I clean it while warm. Chain mail scrubber with light pressure to get any bits off, light wash with soap and water. Towle dry then onto stove at med for a few min to dry completely, crank the heat...

Simply because you can get more in it. Much easier to cook "more" food, like, e.g., 4 fried eggs (easier to flip), or 6 or more eggs (just to fit in the pan). A 12" pan can do everything a 10" pan...

I have the 12" and can tell you they're not that short. Also, it is a heavy pan, but there is the helper handle on the other side of the pan. Just remember they both get hot.

If your pan is dripping while seasoning then you have too much oil on it. Heat to 200f for 10 min, wipe oil/crisco on then wipe off as much as you can, heat to 350f for 15 min then remove and wipe...
