Sounds like you are just making the 3-way circuit a single pole by skipping the other switch. Seems a bit odd to do that, since it would be removing the 3-way functionality. I have a couple circuits...

No, you'll want to look at the Lutron product currently on sale. The switch has to be specifically designed to support two wires.

Have not, but heard you can as long as you know it's only on or off, no speed control. The dimmers, specifically, had issues with speed control too so I wouldn't use those there either.
