Of the device is right next to ero router 1 it is 350mbps but next room it is about 70

is this what you have? https://eero.com/shop/pro-wifi-system Looks like each ethernet port on the mesh device is gig ethernet. so yeah, you could get this, put each mesh unit on its own gig port...

Was thinking this: from model use ethernet cable to ero router 1 then use ethernet cable to ero router 2 then use another ethernet cable to ero router 3. So this would still not increase above...

No. Your bottle neck is still the wireless mesh network. A gig switch won't make your wireless network faster.
