I've never believed mesh filters actually filter well to begin with. I've used paper filters after making cold brew just to get all sediment out.

I don't know about the health benefits here, but coffee does not contain cholesterol. Plants may have other sterols, but cholesterol is a uniquely animal-based chemical.
