You just have to adjust it, there is a little screw that can lower the paddle to fine tune it. The manual says how to do it. I adjusted my Costco one and it works great for small amounts.

Just make sure it is the Classic Plus and not the regular Classic. Also if you find a cheap Artisan model that one is even better.

I made pizza dough with my 6qt Pro from Costco this weekend. The 5qt shouldn't have any issues either. Pretzels are similar to pizza dough, do you shouldn't have any issues.

The Costco one is better. Has better attachments included and a more powerful motor. It is bigger though so it will take up more space.
