Nothing special about the care. The stainless is a decent quality, and the aluminum core will make them heat up pretty evenly. If you use your butter/pam/oil, they'll be fine.

Cooking wise, they will probably perform very similar. The copper plating on the Viking is very thin and easily wears off in the first few uses, see the reviews.

In for one. At $10 a piece, it's a good deal. You can't buy garbage throwaways for that low. Not worried about staining copper, as patina is cool. It means you use your stuff.
