Look into French carbon steel. Matfer Bourgeat and De Buyer are great brands. Cast iron from Lodge or vintage pieces will also work great. You do one round of seasoning and then just use the skillet.

There's no true non-stick coating which is chemical free, thats basic science. They will all break down under high heat or repeated use. The only way to get food not to stick is by using oil/fat....

All non-stick pans lose their qualities eventually. We have a set of stainless that has lasted over 30 years and we replace our non-stick fry pans every five years or so - regardless of the brand....
