Stainless steel will never appear brand new once you cook in it, so just use it and be happy with it. I have heard people using Bar Keeper's Friend with good results.

I think it depends on on individual cooking. I never use a 12” skillet and in fact returned a 12” as it sat unused. My go to pan is the 10”, 1.5 qt sauce, 3 qt sauté.
