You can apply gift cards to your Apple account and pay for the iPhone, iPad, etc. from there. There's no limit on how many you can apply... the max GC balance you ca hold in your account is $2,000.

Thanks for the update. I think you can just buy the AppleCare using the app and pay with the Apple GC balance. Then you can activate the AC on the phone or at the store, if they need to inspect it.
