I'd say the big reason is that these are one use bags. You seal it with included stickers (with some fun messages on them) and Once you take the sandwich out, you don't really ever reseal the bag, so...

There are other endocrine disruptors. It's not just BPA. BPS is another. I'm sure there are more. Plastic is not safe for food applications

The wax paper bags keep things tighter (if that makes sense). For example in plastic bags i usually wrap it in foil or a paper towel before putting it in the bag, with these they just go straight in.
